Lesson #4: Gateau Basque + a few mix-ups

So I lied – today’s dessert did not involve chantilly cream, BUT it’s not my fault!  The school switched a few lessons by mistake.  Instead we learned to make and created Gateau Basque.   Quite simply, it’s a dessert (not sure how to classify…cake? tart?) that involves a very buttery crust surrounding pastry cream.  That’s it.  But it was not that simple to create.  The crust has sooooo much butter, it was very difficult to handle, even on the marble.  To top off the tricky dessert, someone stole my dough while it was chilling leaving me with poorly executed attempt – there was a reason they took mine!   In the end, it all worked out…

And while this beauty was baking, we practiced making almond paste roses…
