Lesson #16: Mogador

Mogador = dark chocolate meets raspberry and they fall in love…

The picture does not do this cake any justice – it consists of a chocolate genoise layer soaked in raspberry eau de vie, topped with dark chocolate mousse and a layer of raspberry confiture between the two.  Sadly, my mousse was not up to par (the chocolate was not the correct temperature) but it was still delicious (and boozy!).

We are nearing the end – only one more week of classes and then the big practical exam, yikes!  This coming week brings quite a few treats, stay tuned!
