Lesson #3: Jamaica

Warm sunny days, a pina colada by the pool, AK playing with the sand at the beach…all these things are non-existant in chilly, metro-strike Paris but this cake will suffice.  It reminds me of summer and sweet sweet sunshine.

A layer of mango-passionfruit mousse on top of a layer of coconut mousse wrapped with a thin chocolate joconde*…

Now if only a few certain girlfriends from back home were here to share it with me, it reminds me of them as well…

*Today’s fun baking fact:  Here in France, La Joconde is the Mona Lisa as well as a thin, flexible biscuit sponge.
