Lesson #4: Fraisier

We are moving right along at school – the semester has been much busier so far, I actually have school everyday this week!  The latest dessert was Fraisier…the French version of strawberry shortcake.

Although it may look complex, it only consisted of 2 layers of genoise, mousseline cream and a lot of strawberries, which, I might add are far better here than back home.  They are smaller, juicy and red all the way through…so good.   The decoration was italian meringue, toasted as you can see with a rather large blow torch.  I feel like I’m in the garage rather than the kitchen when using the beast.

It was so popular back at the apartment that I’m sad to report, it has already disappeared.  Oh well, I’ll be bringing home yet another treat tomorrow.  Many, many more goodies to come…
