Lesson #11: Plaisir

The beauty of this cake is it’s simplicity, it’s really quite ‘plain jane’ compared to some of my other creations this semester.  The complexity lies in the assembly.   The Plaisir consists of square joconde cake layers on the top and bottom  with vanilla supreme and chocolate mousse sandwiched in the middle.   Where things can go horribly wrong is in the texture of your mousse – if you can’t pour it, it just doesn’t work.  If it does work though, it looks quite impressive…

I was lucky and my mousses were acceptable, only a little wobble here or there in my layers.  I’m also lucky that we have guests right now because the last thing I need is another piece of cake and thankfully they really enjoy this one!
