Lesson #20: Millefeuille Praline

I am aware that I already mentioned that lesson #19 was the final go.  What I meant was it was my last chance in the kitchen before our final.  Today’s FINAL lesson was just a demonstration, something we get the recipe for but don’t actually make…too bad!

Millefeuille loosely translates to ‘one thousand layers’ – I can’t say this particular creation had quite that many but the caramelized puff pastry was very, very flaky.  In between 3 layers of golden pastry was a light praline mousseline cream and a thin crispy chocolate treasure on the bottom.  Millefeuille is a very traditional patisserie item – today’s version was elevated from the classic to something a bit more modern and completely delicious!

Next week is the big final…our days here in Paris are numbered.  So sad.
