Lesson #2: Tarte Creole

I’m finally starting to feel comfortable in Le Cordon Bleu kitchens again…it was an odd feeling to be back, I felt like a newbie.  To top it off, we have a very different (and much more strict) chef for the final instalment of the Diplome Patisserie.  I’m getting there though and completing the first 2 pastries without a hitch has helped tremendously…

This little number is like a sunny beach on a smokin’ hot day in Hawaii – a very thin tart crust with silky coconut mousse in the bottom, a Malibu-soaked Savoie cake layer in the middle and fresh pineapple with Italian meringue on top.  A nice way to brighten a less than pleasant day here in Paris…it’s really starting to feel like fall here and this dessert added just a little bit of sunshine.
